There is no way that you can guess if your mixture is up to a 240. Candy thermometers are a pretty essential part of any candy making. I would really encourage using a thermometer. Some things don’t set right if they aren’t up to a specific temperature. Then….. on the other hand…. maybe making marshmallows isn’t that specific. So you could definitely try. I personally don’t know from experience. 240 degrees is pretty hot….. so I would imagine when every thing is boiling pretty well…. time out 5 extra minutes from that.

As far as you mixer….. its probably recommends a stand mixer because it is going to take a hell of a lot of mixing to fluff that marshmallow up. If you think you arms are up to holding that mixer for a good 20 minutes. Go for it.

Its always a good to experiment in the kitchen…. I have been cooking and baking for a long time….. yet sometimes I experiment and things turn out great….. and sometimes not so great…… but there is no harm in trying. Best of luck to you……

Hey! I totally know what you mean, I am pretty young and LOVE to bake! I’m always trying new recipes multiple times in a week– and my family is almost overloaded on the baked goods, they cant eat it all up! I recommend doing this: maybe tell your neighbors and friends that you are happy to bake for any of their needs. Whether you bake someone cupcakes for a family birthday or you just surprise your next door neighbor with a fresh baked apple pie, I’m sure they will be very appreciative. Maybe call some people who you think would be willing to maybe buy your products if you could produce them for them- for example the cupcakes for a little girls bday party! You could offer for them to even come to your house and sample your products and see which flavors they like best!

If that doesn’t get you very far, you could always donate the baked goods to senior center, community center, children’s hospital, homeless shelter, etc. Or, you could consider bringing some items in for a bake sale at your next church or school event.

If you want to still make things at home but dont want an overflow of sweets, maybe try cutting all the ingredients in half to get a smaller yield on your recipe, that way you can still enjoy your baked good without the rest going to waste!

The item belonged to my mother in law and looks to be made 1940-1960. It works and I have the glass mixer bowl w/ dough mixers and all accessories. It is light tan and dark brown in color.

It has to be over 100 years old to be called antique, just fyi.
Look up the serial number on the bottom and then google that to find out exactly how old it is.
Those kinds of things are not old enough to have any real value as collectables yet and is probably still being used in some kitchens.
Try to find one like it on Ebay to see what folks are asking for one like it and also to see if any bids are being made on it.

Viking and Kitchenaid are both excellent stand mixers. At home I have a Kitchenaid that my mother has had since before I was born (20+ years) and we’ve abused and used that thing in ways I can’t describe. It’s made countless batches of cookies, cheesecakes, quick breads, muffins, cup cakes, yeast breads, pie doughs, pumkin pie fillings – anything and everything and it’s still running like a champ.
My culinary school recently purchased a fleet of Viking stand mixers for use in the baking classes, and they seem to be alright. I don’t like the model we have, though, the tilt mechanism isn’t intuitive and the bowl just doesn’t sit right in the machine.
Kitchenaid products and replacement parts are readily available and their customer service (in my experience) is second to none, Viking on the other hand is just starting to really get into the consumer grade mixers and their accessories and services are a bit harder to come by. Additionally, I believe the Viking costs most than Kitchenaid, if that is significant. And if this is important to you at all, Kitchenaids come in a zillion different colors.

Once you get one, you’ll wander how you ever lived without it. I received it as a gift for Mother’s Day and it is totally worth the price. You can make bread without kneading because the mixer does it for you. Buy attachments for making Ice Cream, Sausage, Noodles and they also have an attachment for grinding different types of meats. The one I have is an Artisan and I use it all the time. Great time saver. Pays for itself over time. Well worth the price and you can find them on sale all the time. Try this: FRENCH BUTTER CREAM

1 cup unsalted butter
1/2 cup shortening
2 cups confectioners’ sugar
1 teaspoon vanilla extract
1/4 teaspoon butter flavored extract
1/2 cup heavy whipping cream
4 tablespoons all-purpose flour

Mix heavy cream and flour in a small bowl. Heat the mixure in the microwave for 45 seconds on high. Set aside to cool.
In a mixing bowl, combine butter, shortening, confectioner’s sugar, vanilla extract and butter extract.
Using and electric mixer, beat on low until combined. Then beat on medium speed for 6-8 minutes.
Next add the heavy cream mixture, and beat on medium speed for another 10 minutes. ( Mixture will appear soupy at first, but will become fluffy.)

This always came out well for me. I have noticed that since they reformulated Crisco to make it transfat free, it seems to have a higher water content. but this recipe relies more on the butter.

That is so annoying, all that work and all the ingredients and then it doesn’t work. Good Luck!
